Almond Flour-Bound Ground Beef Meatloaf with Tomato Glaze

- 24 oz ground beef
- 1/2 cup almond flour
- 1 egg
- 1/4 cup onion
- 1/4 cup carrots
- 1/2 cup tomato sauce
- 1 tbsp apple cider vinegar
- 1/2 tsp dried thyme
- 1/2 tsp garlic powder
Instructions
- Step 1: Preheat oven to 375°F (190°C). In a large bowl, combine 24 oz ground beef, 1/2 cup almond flour, 1 egg, 1/4 cup diced onion, 1/4 cup diced carrots, 1/2 tsp dried thyme, and 1/2 tsp garlic powder. Mix gently with a spoon until just combined.
- Step 2: Transfer mixture to a lined baking dish and shape into a loaf. In a small bowl, mix 1/2 cup tomato sauce and 1 tbsp apple cider vinegar. Brush half of the mixture over the meatloaf.
- Step 3: Bake for 40 minutes until internal temperature reaches 160°F. Brush with remaining glaze and bake for 5 more minutes until caramelized.
