Aviation Fuel Glazed Salmon with Lemon Dill

Ingredients
- 4 (6 oz each) salmon fillets
- 2 tbsp olive oil
- 3 tbsp lemon juice
- 2 tbsp chopped dill
- 1 minced clove garlic
- 1/4 cup white wine
- 1/4 tsp salt
- 1/8 tsp black pepper
Instructions
- Step 1: Pat salmon fillets dry with paper towels and season both sides with 1/4 tsp salt and 1/8 tsp black pepper.
- Step 2: Heat 1 tbsp olive oil in a large skillet over medium-high heat until shimmering. Place salmon skin-side down and cook for 4 minutes without moving.
- Step 3: Flip salmon and add 1 minced garlic clove, 2 tbsp chopped dill, 3 tbsp lemon juice, and 1/4 cup white wine to the skillet. Reduce heat to medium and simmer for 5 minutes until salmon reaches 125°F internally.
- Step 4: Remove salmon from skillet and keep warm. Continue simmering sauce for 2 minutes until slightly thickened, then stir in remaining 1 tbsp olive oil.
- Step 5: Drizzle sauce over salmon fillets and serve immediately.
