Avocado and Spinach Soup

Ingredients
- 1 large, peeled and pitted avocado
- 2 cups fresh spinach
- 1 1/2 cups low-sodium chicken broth
- 1 clove, minced garlic
- 1 tbsp lemon juice
- 1 tbsp olive oil
- 1/4 tsp salt
- 1/8 tsp black pepper
Instructions
- Step 1: Heat 1 tbsp olive oil in a medium saucepan over medium heat. Add 1 minced garlic clove and cook for 1 minute until fragrant, stirring constantly.
- Step 2: Add 2 cups fresh spinach and cook for 2 minutes until wilted and reduced in volume. Stir in 1 1/2 cups low-sodium chicken broth and simmer for 5 minutes to meld flavors.
- Step 3: Remove from heat, let cool slightly, then transfer mixture to a blender. Add 1 peeled and pitted avocado, 1 tbsp lemon juice, 1/4 tsp salt, and 1/8 tsp black pepper. Blend on high for 2 minutes until completely smooth, scraping down sides as needed.
