Avocado-Lime Quinoa Salad with Cucumber and Radish

Ingredients
- 1/2 cup quinoa
- 1/2 medium cucumber
- 1/2 cup radish
- 1/2 large avocado
- 1 lime
- 2 tbsp fresh cilantro
- 1 tsp avocado oil
Instructions
- Step 1: Rinse 1/2 cup quinoa under cold water, then cook in 1 cup water for 15 minutes until fluffy and water is absorbed; let cool completely.
- Step 2: Thinly slice 1/2 medium cucumber and 1/2 cup radish into matchsticks.
- Step 3: Scoop 1/2 large avocado flesh into a bowl, add 1/4 cup lime juice, 1 tsp avocado oil, and 2 tbsp chopped cilantro, mashing until smooth with a fork.
- Step 4: In a large bowl, combine cooled quinoa, cucumber, and radish, then toss with 3/4 of the avocado dressing until evenly coated.
- Step 5: Drizzle remaining dressing over top and serve chilled.
