Baked Lemon-Garlic Salmon with Roasted Broccoli

Ingredients
- 4 (6 oz each, skin-on) salmon fillets
- 2 tbsp olive oil
- 4 minced garlic cloves
- 1 (zested and juiced, 1 tbsp zest + 2 tbsp juice) lemon
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 cups florets broccoli
Instructions
- Step 1: Pat 4 salmon fillets (6 oz each, skin-on) dry with paper towels, then season with 1/2 tsp salt, 1/4 tsp black pepper, and 1 tsp dried thyme.
- Step 2: Whisk 2 tbsp olive oil, 4 minced garlic cloves, 1 tbsp lemon zest, and 2 tbsp lemon juice in a small bowl.
- Step 3: Arrange salmon in a single layer on a parchment-lined baking sheet, brush with garlic-lemon mixture, and place 2 cups broccoli florets around the salmon.
- Step 4: Bake at 400°F for 18-22 minutes until salmon flakes easily with a fork and broccoli is golden at the edges.
