Baked Spinach and Smoked Gouda Egg Muffins

- 6 large Eggs
- 1 cup packed, chopped Spinach
- 1/2 cup, shredded Smoked Gouda
- 1/4 cup, finely diced Onion
- 1 tbsp Olive oil
- 1/4 tsp Salt
- 1/8 tsp Black pepper
Instructions
- Step 1: Preheat oven to 375°F (190°C). Lightly grease a 6-cup muffin tin with 1 tbsp olive oil.
- Step 2: Whisk 6 large eggs in a medium bowl until smooth, then stir in 1/4 tsp salt, 1/8 tsp black pepper, 1 cup packed chopped spinach, and 1/4 cup finely diced onion.
- Step 3: Pour the egg mixture evenly into the greased muffin cups, filling each about 3/4 full.
- Step 4: Sprinkle 2 tablespoons shredded smoked Gouda evenly over each muffin.
- Step 5: Bake for 20-22 minutes until the edges are golden and the centers are set when gently pressed.
