Baked Turkey-Stuffed Bell Peppers

Ingredients
- 2 large bell peppers
- 8 oz ground turkey
- 1/4 cup onion
- 1 clove garlic
- 1/2 cup tomato
- 1 tsp olive oil
- 1/4 tsp sea salt
- 1/8 tsp black pepper
- 1/4 tsp dried oregano
Instructions
- Step 1: Preheat oven to 375°F. In a skillet, heat 1 tsp olive oil over medium heat. Add 1/4 cup diced onion and 1 minced garlic clove, sautéing for 3 minutes until softened.
- Step 2: Add 8 oz ground turkey, 1/2 cup diced tomato, 1/4 tsp sea salt, 1/8 tsp black pepper, and 1/4 tsp dried oregano. Cook for 8-10 minutes until turkey is browned and tomatoes are softened.
- Step 3: Stuff the mixture into 2 halved and seeded bell peppers. Place on a baking sheet and bake for 20 minutes until peppers are tender.
