Beef and Greens Noodle Stir-Fry

Ingredients
- 12 ounces beef sirloin
- 3 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sugar
- 2 cloves garlic
- 1 teaspoon ginger
- 1/4 cup green onions
- 1 medium bell peppers
- 2 cups bok choy
- 8 ounces rice noodles
- 1 teaspoon sesame oil
- 2 tablespoons vegetable oil
Instructions
- Step 1: Whisk together 3 tablespoons soy sauce, 1 tablespoon rice vinegar, 1 teaspoon sugar, 2 minced garlic cloves, and 1 teaspoon minced ginger in a small bowl.
- Step 2: Heat 2 tablespoons vegetable oil in a wok over high heat. Add 12 ounces thinly sliced beef and stir-fry 2-3 minutes until browned, then remove from wok.
- Step 3: Add 1 medium sliced bell pepper and 2 cups chopped bok choy to wok. Stir-fry 3 minutes until slightly tender.
- Step 4: Return beef to wok, add sauce mixture, and stir to coat. Add 8 ounces cooked rice noodles and 1/4 cup chopped green onions. Toss until heated through and sauce coats noodles, 2 minutes.
- Step 5: Drizzle with 1 teaspoon sesame oil and serve immediately.
