Beef and Greens Noodle Stir-Fry

  1. Step 1: Whisk together 3 tablespoons soy sauce, 1 tablespoon rice vinegar, 1 teaspoon sugar, 2 minced garlic cloves, and 1 teaspoon minced ginger in a small bowl.
  2. Step 2: Heat 2 tablespoons vegetable oil in a wok over high heat. Add 12 ounces thinly sliced beef and stir-fry 2-3 minutes until browned, then remove from wok.
  3. Step 3: Add 1 medium sliced bell pepper and 2 cups chopped bok choy to wok. Stir-fry 3 minutes until slightly tender.
  4. Step 4: Return beef to wok, add sauce mixture, and stir to coat. Add 8 ounces cooked rice noodles and 1/4 cup chopped green onions. Toss until heated through and sauce coats noodles, 2 minutes.
