  1. Step 1: Bring 4 cups of beef broth to a gentle simmer in a large pot over medium heat.
  2. Step 2: Add ramen noodles to the broth and cook for 3 minutes until tender, stirring occasionally.
  3. Step 3: Add 2 cups of fresh spinach to the pot and cook for 1 minute until wilted.
  4. Step 4: Divide noodles and broth between two bowls. Top each with one peeled soft-boiled egg, 3 sliced green onions, 1 tsp sesame oil, 1 tbsp soy sauce, and 1/2 tsp chili oil.
