Beef Larb with Roasted Peanuts

Ingredients
- 12 oz Ground beef
- 2 tbsp Lime juice
- 2 tbsp Fish sauce
- 1 tbsp Palm sugar
- 2 cloves Garlic
- 2 Chili
- 1/4 cup Red onion
- 1/4 cup Fresh cilantro
- 1/4 cup Fresh mint
- 1/4 cup Roasted peanuts
Instructions
- Step 1: Whisk 2 tbsp lime juice, 2 tbsp fish sauce, 1 tbsp palm sugar, and 2 minced garlic cloves in a small bowl until sugar dissolves.
- Step 2: Heat a skillet over medium heat; add 12 oz ground beef and cook, breaking it up, for 5-7 minutes until browned and cooked through.
- Step 3: Remove skillet from heat; stir in lime juice mixture, then add 2 finely chopped chilies and 1/4 cup finely chopped red onion. Mix well.
- Step 4: Transfer beef mixture to a bowl and let cool slightly. Stir in 1/4 cup chopped fresh cilantro, 1/4 cup chopped fresh mint, and 1/4 cup roasted peanuts.
