Beef Stir-Fry with Bok Choy and Shiitake Mushrooms

Ingredients
- 12 oz flank steak
- 2 heads bok choy
- 8 oz shiitake mushrooms
- 2 tbsp avocado oil
- 1 tbsp minced fresh ginger
- 3 cloves minced garlic
- 2 tbsp tamari
- 1/4 tsp sea salt
Instructions
- Step 1: Slice flank steak against the grain into 1/4-inch strips. Trim bok choy, separating stems and leaves. Slice shiitake stems into thin strips and slice caps.
- Step 2: Heat 1 tbsp avocado oil in a wok over high heat. Add beef and stir-fry for 2 minutes until browned, then remove and set aside.
- Step 3: Add remaining 1 tbsp avocado oil to the wok, followed by ginger and garlic. Sauté for 30 seconds until fragrant.
- Step 4: Add bok choy stems and shiitake mushrooms, stir-frying for 3 minutes. Add bok choy leaves, tamari, and sea salt, then cook 2 more minutes until leaves wilt.
