Bekasi-Style Beef Soup with Rice Noodles

Ingredients
- 8 oz beef sirloin
- 4 oz rice noodles
- 4 cups beef broth
- 2 cups bean sprouts
- 4 leaves kaffir lime leaves
- 1-inch piece galangal
- 2 stalks lemongrass
- 2 tbsp fresh cilantro
Instructions
- Step 1: Thinly slice 8 oz beef sirloin against the grain. Trim and slice 1-inch galangal and 2 lemongrass stalks into thin rounds. Place in a pot with 4 cups beef broth, 4 kaffir lime leaves, and 1-inch galangal slice. Bring to a simmer over medium heat and cook for 15 minutes.
- Step 2: Add 2 cups bean sprouts and 4 oz rice noodles to the broth. Cook for 5 minutes until noodles are tender but still firm.
- Step 3: Add sliced beef sirloin and cook for 2 minutes until just opaque. Remove from heat immediately to prevent overcooking.
- Step 4: Discard kaffir lime leaves and galangal. Serve hot in bowls, garnished with 2 tbsp fresh cilantro, with extra bean sprouts on the side.
