  1. Step 1: Pat pork chops dry with paper towels and season both sides generously with salt, black pepper, garlic powder, and cinnamon.
  2. Step 2: Heat olive oil in a large skillet over medium-high heat until shimmering. Add pork chops and sear for 4 minutes per side until golden brown and meat is opaque at the edges.
  3. Step 3: Reduce heat to medium-low, pour in apple cider and honey, scraping up any browned bits from the pan. Add Dijon mustard and stir to combine.
  4. Step 4: Simmer uncovered for 8-10 minutes, basting chops occasionally with the sauce, until internal temperature reaches 145°F (63°C) and sauce has reduced to a syrupy consistency that coats the back of a spoon.
