Blended Broccoli and Goat Cheese Soup
A smooth, comforting soup with pureed broccoli and tangy goat cheese, finished with a hint of cream.

Ingredients
- 2 tbsp butter
- 1 medium, finely chopped onion
- 2 cloves, minced garlic
- 4 cups, florets broccoli
- 3 cups vegetable broth
- 3 oz goat cheese
- 1/4 cup heavy cream
- 1/4 cup, chopped chives
Instructions
- Step 1: Melt 2 tbsp butter in a large pot over medium heat. Add 1 medium finely chopped onion and cook for 5 minutes until soft and translucent.
- Step 2: Stir in 2 minced garlic cloves and cook for 1 minute until fragrant.
- Step 3: Add 4 cups broccoli florets and 3 cups vegetable broth to the pot. Simmer for 15 minutes until broccoli is very tender.
- Step 4: Use an immersion blender to puree soup until completely smooth (or transfer to a blender in batches).
- Step 5: Return soup to pot, stir in 3 oz goat cheese and 1/4 cup heavy cream until melted and combined.
- Step 6: Season with salt and pepper to taste. Serve hot, garnished with 1/4 cup chopped chives.
