Blended Broccoli and Goat Cheese Soup

  1. Step 1: Melt 2 tbsp butter in a large pot over medium heat. Add 1 medium finely chopped onion and cook for 5 minutes until soft and translucent.
  2. Step 2: Stir in 2 minced garlic cloves and cook for 1 minute until fragrant.
  3. Step 3: Add 4 cups broccoli florets and 3 cups vegetable broth to the pot. Simmer for 15 minutes until broccoli is very tender.
  4. Step 4: Use an immersion blender to puree soup until completely smooth (or transfer to a blender in batches).
  5. Step 5: Return soup to pot, stir in 3 oz goat cheese and 1/4 cup heavy cream until melted and combined.
  6. Step 6: Season with salt and pepper to taste. Serve hot, garnished with 1/4 cup chopped chives.
