  2. Step 2: Pat 1 lb skin-on, bone-in chicken thighs dry with paper towels. Rub with 1 tbsp olive oil, 2 tsp Cajun seasoning, and 1/4 tsp salt.
  3. Step 3: Place chicken thighs skin-side up on the baking sheet with sweet potatoes, then scatter 1/2 cup thinly sliced onion and 2 minced garlic cloves around them.
