Cajun-Seasoned Chicken Thighs with Sweet Potatoes

- 1 lb, skin-on, bone-in chicken thighs
- 2 medium, peeled and cubed 1-inch sweet potatoes
- 2 tbsp olive oil
- 2 tsp Cajun seasoning
- 1/2 cup, thinly sliced onion
- 2 cloves, minced garlic
- 1 tsp dried thyme
- 1/2 tsp salt
Instructions
- Step 1: Preheat oven to 425°F (220°C). Toss 2 medium peeled and cubed sweet potatoes with 1 tbsp olive oil, 1/2 tsp salt, and 1/4 tsp thyme on a baking sheet, then spread in a single layer.
- Step 2: Pat 1 lb skin-on, bone-in chicken thighs dry with paper towels. Rub with 1 tbsp olive oil, 2 tsp Cajun seasoning, and 1/4 tsp salt.
- Step 3: Place chicken thighs skin-side up on the baking sheet with sweet potatoes, then scatter 1/2 cup thinly sliced onion and 2 minced garlic cloves around them.
- Step 4: Roast for 30 minutes, then flip chicken thighs and sprinkle with remaining 1/4 tsp thyme. Continue roasting for 15-20 minutes until chicken reaches 165°F (74°C) and sweet potatoes are tender with golden edges.
- Step 5: Let rest for 5 minutes before serving, drizzling any pan juices over the top.
