Caramelized Onion Boxty with Fresh Thyme

- 1/4 cup all-purpose flour
- 2 medium onions
- 2 tsp fresh thyme
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Step 1: Peel and grate 1 lb potatoes using a box grater, then squeeze excess moisture through a clean kitchen towel.
- Step 2: Heat 2 tbsp olive oil in a skillet over medium-low heat, add 2 medium sliced onions, and cook slowly for 20-25 minutes until golden and caramelized, stirring occasionally.
- Step 3: In a bowl, combine grated potatoes, 1/4 cup all-purpose flour, 1/2 tsp salt, 1/4 tsp black pepper, and 2 tsp fresh thyme. Mix until evenly distributed.
- Step 4: Form 6 equal portions into 1/2-inch-thick patties. Heat 1 tbsp olive oil in a non-stick skillet over medium heat, then cook patties for 4-5 minutes per side until golden brown and crispy.
- Step 5: Serve hot with caramelized onions spooned over the top.
