Cardamom-Scented Rice Pilaf with Citrus Zest

Ingredients
- 2 cups long grain white rice
- 3 tbsp butter
- 1 large, finely chopped onion
- 1 tbsp, crushed cardamom pods
- 1/4 cup chicken broth
- 1/4 cup water
- to taste salt
- 1 tsp lemon zest
Instructions
- Step 1: Rinse 2 cups long grain white rice under cold water until the water runs clear. Drain well.
- Step 2: Melt 3 tbsp butter in a large pot over medium heat. Add 1 large finely chopped onion and cook for 5 minutes until golden.
- Step 3: Add 1 tbsp crushed cardamom pods and cook for 1 minute until fragrant.
- Step 4: Stir in the rinsed rice and cook for 2 minutes, stirring to coat the rice in butter.
- Step 5: Add 1/4 cup chicken broth and 1/4 cup water, then bring to a simmer.
- Step 6: Cover the pot with a tight-fitting lid, reduce heat to low, and cook for 18-20 minutes until the rice is tender and liquid is absorbed.
- Step 7: Remove from heat and let stand, covered, for 5 minutes. Fluff with a fork, stir in 1 tsp lemon zest, and season with salt to taste.
