Cast Iron Lemon-Garlic Chicken Thighs with Green Beans

Ingredients
- 1 lb (bone-in, skin-on) chicken thighs
- 2 tbsp olive oil
- 4 minced garlic cloves
- 1 juiced lemon
- 1 tsp chopped fresh thyme
- 12 oz trimmed green beans
- 1 tsp kosher salt
- 1/2 tsp black pepper
Instructions
- Step 1: Pat chicken thighs dry and season with 1 tsp salt and 1/2 tsp black pepper. Heat 2 tbsp olive oil in a cast iron skillet over medium-high heat until shimmering.
- Step 2: Add chicken skin-side down and cook for 5-6 minutes until golden brown, then flip and cook for 3 minutes. Remove chicken and set aside.
- Step 3: Add minced garlic to the skillet and cook for 30 seconds until fragrant. Stir in lemon juice, 1 tsp thyme, and 1/2 cup water, scraping up browned bits.
- Step 4: Return chicken to the skillet, nestling it among green beans. Simmer covered for 15-18 minutes until chicken reaches 165°F and beans are bright green and tender.
