Char-Grilled Oysters with Lemon-Caper Butter

- 12 Oysters on the half shell
- 2 tbsp Olive oil
- 1 Lemon
- 2 tbsp Capers
- 3 tbsp Butter
- 2 tbsp Fresh parsley
- 1/4 tsp Salt
- 1/8 tsp Black pepper
Instructions
- Step 1: Preheat a grill or grill pan over medium-high heat. Brush the grates with 2 tbsp olive oil to prevent sticking. Arrange 12 oysters on the half shell in a single layer on the hot surface, ensuring they sit securely.
- Step 2: Grill the oysters for 3-4 minutes until their edges curl and shells slightly open, then remove from heat immediately.
- Step 3: In a small saucepan over low heat, melt 3 tbsp butter with 2 tbsp rinsed capers, the zest and juice of 1 lemon, 2 tbsp chopped parsley, 1/4 tsp salt, and 1/8 tsp black pepper, stirring until fully combined and fragrant, about 2 minutes.
- Step 4: Drizzle the lemon-caper butter sauce over the grilled oysters and serve immediately while hot.
