Ingredients
- 12 fresh oysters
- 2 tbsp unsalted butter
- 1/4 tsp smoked salt
- 1 tbsp olive oil
- 2 medium shallots
- 1/4 cup all-purpose flour
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 lemon
Instructions
- Step 1: Preheat grill or grill pan to medium-high heat. In a small bowl, combine 2 tbsp unsalted butter and 1/4 tsp smoked salt until smooth.
- Step 2: Thinly slice 2 medium shallots and place in a shallow dish. Whisk together 1/4 cup all-purpose flour, 1/4 tsp salt, and 1/4 tsp black pepper. Toss shallots in flour mixture until evenly coated.
- Step 3: Heat 1 tbsp olive oil in a skillet over medium heat. Add floured shallots in a single layer and cook 3-4 minutes per side until golden and crispy. Transfer to paper towel-lined plate.
- Step 4: Place oysters on preheated grill, cooking 2-3 minutes until shells curl slightly. Spoon smoked butter mixture over each oyster.
- Step 5: Serve immediately with crispy shallots and lemon wedges.
