Char-Grilled Oysters with Smoked Garlic Butter

Ingredients
- 24 fresh oysters
- 2 tbsp unsalted butter
- 2 cloves, minced garlic
- 1 tsp smoked paprika
- 1 tbsp, finely chopped fresh parsley
- 1, cut into wedges lemon
- 1/4 tsp kosher salt
- 1/4 tsp freshly ground black pepper
Instructions
- Step 1: Preheat a grill or grill pan to medium-high heat. Place the oysters on the grill with the cupped side down and cook for 3 minutes until the edges curl and shells slightly open.
- Step 2: Melt 2 tbsp unsalted butter in a small saucepan over medium heat. Add 2 minced garlic cloves and 1 tsp smoked paprika, stirring for 1 minute until fragrant but not browned.
- Step 3: Remove oysters from heat and immediately spoon the smoked garlic butter mixture over each oyster. Sprinkle with 1 tbsp finely chopped parsley, 1/4 tsp kosher salt, and 1/4 tsp freshly ground black pepper. Serve immediately with lemon wedges.
