- 1 lb ground beef
- 1 medium, finely chopped onion
- 2 cloves, minced garlic
- 1 cup frozen mixed vegetables
- 1 cup, cooked brown rice
- 1/2 cup tomato sauce
- 1/2 cup, shredded cheddar cheese
- 1/4 cup, diced tomatoes
- 1/4 cup, diced red onion
- 1 tbsp lime juice
- 1/4 tsp salt
- 1/4 tsp black pepper
Instructions
- Step 1: Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add 1 medium finely chopped onion and 2 minced garlic cloves, stirring for 2-3 minutes until soft and translucent.
- Step 2: Add 1 lb ground beef, breaking it into small pieces with a spoon. Cook for 5-7 minutes until browned, then drain excess fat.
- Step 3: Stir in 1 cup frozen mixed vegetables and 1/2 cup tomato sauce, cooking for 3-4 minutes until vegetables are tender. Season with 1/4 tsp salt and 1/4 tsp black pepper.
- Step 4: In a small bowl, combine 1/4 cup diced tomatoes, 1/4 cup diced red onion, and 1 tbsp lime juice to form the salsa.
- Step 5: Divide 1 cup cooked brown rice among bowls, top with the beef mixture, sprinkle with 1/2 cup shredded cheddar cheese, and serve with the tomato salsa on top.
