Chickpea and Spinach Stir-Fry with Lemon

Ingredients
- 1 can (15 oz) chickpeas
- 2 cups fresh spinach
- 2 tbsp olive oil
- 1 tbsp minced garlic
- 1 tbsp lemon juice
- 1 tsp lemon zest
- 1/4 tsp red pepper flakes

Instructions
- Step 1: Heat 2 tbsp olive oil in a large skillet over medium-high heat until shimmering and a light haze forms above the oil.
- Step 2: Add 1 tbsp minced garlic and 1/4 tsp red pepper flakes, and sauté for 60 seconds until fragrant and garlic turns golden but not browned.
- Step 3: Add 1 can (15 oz) drained and rinsed chickpeas and 2 cups fresh spinach; toss with the garlic oil for 3-4 minutes until spinach wilts and chickpeas are heated through.
- Step 4: Stir in 1 tbsp lemon juice and 1 tsp lemon zest, then season with salt to taste; cook for 1 minute until flavors combine and sauce slightly thickens.
