Chipotle Spiced Chili

Ingredients
- 1 tbsp olive oil
- 1 medium, diced onion
- 2 cloves, minced garlic
- 1, diced bell pepper
- 1 cup diced tomatoes
- 1 can (15 oz), drained and rinsed kidney beans
- 1 can (15 oz), drained and rinsed black beans
- 2 tbsp chipotle pepper in adobo sauce
- 1 tsp cumin
- 1/2 tsp smoked paprika
- 1/4 tsp cayenne pepper
- 2 cups chicken broth
Instructions
- Step 1: Heat 1 tbsp olive oil in a large pot over medium heat. Add 1 diced onion and 2 minced garlic cloves, cooking for 3-4 minutes until softened.
- Step 2: Add 1 diced bell pepper and cook for 2 more minutes.
- Step 3: Stir in 1 cup diced tomatoes, 1 can kidney beans, 1 can black beans, 2 tbsp chipotle pepper in adobo sauce, 1 tsp cumin, 1/2 tsp smoked paprika, and 1/4 tsp cayenne pepper. Add 2 cups chicken broth and bring to a simmer.
- Step 4: Reduce heat to low, cover, and simmer for 30 minutes, stirring occasionally.
- Step 5: Season with salt to taste and serve hot.
