- 5 oz kale
- 3 tbsp olive oil
- 1 lemon
- 1/4 cup walnuts
- 1/4 cup feta cheese
- 1/4 cup red onion
- 1 tbsp balsamic vinegar
Instructions
- Step 1: Remove stems from 5 oz kale and tear leaves into bite-sized pieces. Massage with 1 tbsp olive oil for 2 minutes until tender.
- Step 2: Zest 1 lemon, then squeeze 1 tbsp juice. Whisk zest, 1 tbsp lemon juice, 1 tbsp balsamic vinegar, and 2 tbsp olive oil to create a vinaigrette.
- Step 3: Toss kale with 1/4 cup diced red onion and 1/4 cup crumbled feta cheese.
- Step 4: Whisk 1/4 cup toasted walnuts into the vinaigrette, then drizzle over salad. Toss gently to coat all leaves.
