Classic Minestrone Soup

Ingredients
- 2 tbsp olive oil
- 2, diced carrots
- 2 stalks, diced celery
- 1, diced onion
- 2 cloves, minced garlic
- 1 can (15 oz), drained cannellini beans
- 4 cups vegetable broth
- 1 can (14 oz) diced tomatoes
- 1, diced zucchini
- 1/2 cup small pasta shapes
- 2 cups spinach
- 1/2 tsp dried oregano
Instructions
- Step 1: Heat 2 tbsp olive oil in a large pot over medium heat. Add 2 diced carrots, 2 diced celery stalks, 1 diced onion, and 2 minced garlic cloves. Sauté for 5 minutes until vegetables are softened and fragrant.
- Step 2: Stir in 1 can (15 oz) drained cannellini beans, 4 cups vegetable broth, 1 can (14 oz) diced tomatoes, 1 diced zucchini, 1/2 tsp dried oregano, 1 tsp salt, and 1/2 tsp black pepper. Bring to a gentle simmer and cook for 15 minutes.
- Step 3: Add 1/2 cup small pasta shapes and 2 cups fresh spinach. Cook for 8-10 minutes, or until the pasta is tender and the spinach has wilted completely.
