Clear Vegetable and Noodle Soup

Ingredients
- 1 tablespoon sesame oil
- 1 small thinly sliced carrot
- 1/2 cup florets broccoli
- 1/2 cup sliced mushrooms
- 2 cups vegetable broth
- 2 ounces rice noodles
- 1/4 cup chopped fresh cilantro
- 1 tablespoon juice lime

Instructions
- Step 1: Heat 1 tablespoon sesame oil in a medium pot over medium heat. Add sliced carrot and cook for 2 minutes until slightly softened.
- Step 2: Add broccoli florets and mushrooms, stirring for 3 minutes until vegetables are tender.
- Step 3: Pour in 2 cups vegetable broth and bring to a gentle simmer. Add 2 ounces rice noodles and cook for 4-5 minutes until noodles are tender but still firm.
- Step 4: Remove from heat and stir in 1/4 cup chopped cilantro and 1 tablespoon lime juice. Season with salt to taste before serving.
