Coastal Landmark Seafood Chowder

Ingredients
- 12, shucked oysters
- 2 medium, diced 1/2-inch potatoes
- 1, finely chopped onion
- 2 stalks, diced celery
- 1, diced carrots
- 1 cup, frozen corn
- 2 tbsp fresh, chopped dill
- 1/2 cup heavy cream
- 3 cups chicken stock
- 2 tbsp butter
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Step 1: Melt 2 tbsp butter in a large pot over medium heat. Add 1 chopped onion, 2 diced celery stalks, and 1 diced carrot. Cook for 5 minutes until softened but not browned.
- Step 2: Add 2 diced medium potatoes and 3 cups chicken stock. Bring to a gentle simmer and cook for 12 minutes until potatoes are fork-tender.
- Step 3: Stir in 1 cup frozen corn and 12 shucked oysters. Simmer for 3 minutes until oysters just curl at the edges.
- Step 4: Reduce heat to low, stir in 1/2 cup heavy cream and 2 tbsp chopped fresh dill. Season with 1/2 tsp salt and 1/4 tsp black pepper, stirring until heated through but not boiling.
- Step 5: Remove from heat and let rest for 5 minutes before serving to allow flavors to meld.
