- 2 cups carrots
- 2 medium potatoes
- 1 cup sweet potatoes
- 1 can (13.5 oz) coconut milk
- 3 cloves garlic
- 1 tbsp ginger
- 1/2 onion
- 1 cup vegetable broth
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Step 1: In a large pot, combine 2 cups diced carrots, 2 medium diced potatoes, 1 cup diced sweet potatoes, 1 can coconut milk, 1 cup vegetable broth, 3 minced garlic cloves, 1 tbsp minced ginger, 1/2 diced onion, 1/2 tsp salt, and 1/4 tsp black pepper.
- Step 2: Bring to a gentle simmer over medium heat, then reduce to low. Cover and cook for 25-30 minutes until all vegetables are tender.
- Step 3: Remove lid and simmer uncovered for 5 minutes to thicken. Adjust seasoning if needed. Serve hot.
