Crispy Lemon-Glazed Salmon with Asparagus

Ingredients
- 2 (6 oz each), skin-on salmon fillets
- 1, zested and juiced lemon
- 2 tbsp olive oil
- 1 bunch (12 oz), trimmed asparagus
- 2 cloves, minced garlic
- 1 tbsp, chopped fresh dill
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Step 1: Pat salmon fillets dry with paper towels. Season both sides with 1/2 tsp salt and 1/4 tsp black pepper. Heat 1 tbsp olive oil in a large skillet over medium-high heat until shimmering.
- Step 2: Place salmon skin-side down in the skillet. Cook undisturbed for 6 minutes until skin is crispy and golden. Flip and cook for 3 minutes more, or until fish reaches 125°F internally.
- Step 3: While salmon cooks, toss asparagus with 1 tbsp olive oil, salt, and pepper. Roast on a baking sheet at 425°F (220°C) for 12 minutes until tender-crisp.
- Step 4: Remove salmon from skillet. Add minced garlic to the pan and cook for 30 seconds until fragrant. Stir in lemon zest, lemon juice, and 1 tbsp chopped dill. Simmer for 1 minute until slightly thickened.
- Step 5: Drizzle glaze over salmon and serve immediately with roasted asparagus.
