Cucumber-Mint Hydration Broth

Ingredients
- 1 medium cucumber
- 1/4 cup fresh mint leaves
- 1 cup coconut water
- 2 tbsp lemon juice
- 1/4 tsp sea salt
- 1 tbsp, grated ginger
Instructions
- Step 1: Peel and dice 1 medium cucumber into 1/4-inch cubes. Place in a bowl and add 1/4 cup fresh mint leaves, 2 tbsp lemon juice, 1/4 tsp sea salt, and 1 tbsp grated ginger. Toss gently to combine.
- Step 2: Pour 1 cup coconut water over the mixture and stir until salt dissolves. Refrigerate for at least 1 hour to allow flavors to meld.
- Step 3: Serve chilled in a glass, garnished with extra mint leaves, as a hydrating beverage during Whole30 resets.
