Cumin-Infused Black Bean Soup

Ingredients
- 1 can (15 oz, drained and rinsed) black beans
- 2 cups chicken broth
- 1/2 cup finely diced onion
- 2 cloves minced garlic
- 1 tsp cumin
- 1 can (14 oz) diced tomatoes
- 1/2 tsp chili powder
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Step 1: Heat 1 tbsp olive oil in a large pot over medium heat. Add 1/2 cup finely diced onion and 2 minced garlic cloves, and cook for 3 minutes until fragrant.
- Step 2: Stir in 1 tsp cumin, 1/2 tsp chili powder, 1 can (14 oz) diced tomatoes, 1 can (15 oz, drained and rinsed) black beans, and 2 cups chicken broth. Season with 1/2 tsp salt and 1/4 tsp black pepper.
- Step 3: Bring to a simmer, reduce heat to low, cover, and cook for 20 minutes, stirring occasionally to prevent sticking.
