Cumin-Spiced Ground Beef 'Taco' Bowl with Avocado

- 1 lb ground beef
- 3 cups cauliflower rice
- 1 medium avocado
- 1 tsp cumin
- 1/2 tsp chili powder
- 2 tbsp lime juice
- 1/4 cup diced red bell pepper
- 2 tbsp chopped cilantro
Instructions
- Step 1: Heat 1 tbsp olive oil in a skillet over medium heat. Add ground beef, breaking into small crumbles, and cook for 6 minutes until browned.
- Step 2: Stir in cumin, chili powder, and 1 tbsp lime juice. Cook for 2 minutes, stirring constantly, until spices are fragrant.
- Step 3: Add diced red bell pepper to the skillet and cook for 3 minutes until softened but still crisp.
- Step 4: Stir in 1/2 cup cauliflower rice and cook for 4 minutes until heated through and slightly softened, stirring occasionally.
- Step 5: Divide cauliflower rice mixture into bowls. Top with sliced avocado, chopped cilantro, and remaining 1 tbsp lime juice. Serve immediately.
