Denver Potato Soup with Garden Herb Topping

  1. Step 1: Peel and dice 2 cups yellow potatoes into 1/2-inch cubes. Finely chop 1/2 cup onion and mince 2 garlic cloves.
  2. Step 2: Melt 2 tbsp unsalted butter in a large pot over medium heat. Add the onion and garlic, cooking for 3-4 minutes until soft and fragrant but not browned.
  3. Step 3: Add the diced potatoes and 3 cups chicken or vegetable broth to the pot. Bring to a simmer, then reduce heat to low and cover. Cook for 20 minutes until potatoes are tender.
  4. Step 4: Remove the pot from heat and let cool slightly. Use an immersion blender to puree the soup until smooth, or transfer to a blender in batches. Stir in 1/2 cup heavy cream and cook over low heat for 5 more minutes until heated through.
  5. Step 5: Stir in 2 tbsp finely chopped fresh chives and 1 tbsp finely chopped fresh dill just before serving.
