Dijon-Herb Crusted Chicken Thighs

Ingredients
- 1.5 lbs chicken thighs
- 2 tbsp Dijon mustard
- 1 tbsp fresh thyme
- 1 tsp fresh rosemary
- 3 tbsp all-purpose flour
- 2 tbsp olive oil
- 1/4 lemon
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Step 1: Pat 1.5 lbs chicken thighs dry with paper towels and season with 1/2 tsp salt and 1/4 tsp black pepper on both sides.
- Step 2: In a small bowl, mix 2 tbsp Dijon mustard, 1 tbsp chopped fresh thyme, 1 tsp chopped fresh rosemary, and 3 tbsp all-purpose flour until smooth.
- Step 3: Heat 2 tbsp olive oil in a large oven-safe skillet over medium-high heat until shimmering. Add chicken thighs skin-side down, pressing gently to ensure even contact with the pan.
- Step 4: Cook for 5 minutes until golden brown and skin is crisp, then flip. Spread the mustard mixture evenly over the top of each thigh.
- Step 5: Transfer the skillet to a preheated 400°F oven and bake for 15 minutes until chicken reaches 165°F internally. Squeeze 1/4 lemon over the top and let rest for 5 minutes before serving.
