Dill-Scented Salmon with Zucchini

- 24 oz salmon fillets
- 3 tbsp olive oil
- 2 tbsp fresh dill
- 1 lemon
- 10 oz zucchini
- 1/2 tsp sea salt
- 1/4 tsp black pepper
Instructions
- Step 1: Preheat oven to 400°F (200°C). Place salmon fillets skin-side down on a parchment-lined baking sheet.
- Step 2: Brush salmon with 2 tbsp olive oil, then sprinkle with 1 tbsp dill, 1/4 tsp salt, and 1/8 tsp pepper.
- Step 3: Arrange zucchini slices around salmon, drizzle with remaining 1 tbsp olive oil, and season with 1/4 tsp salt and 1/8 tsp pepper.
- Step 4: Bake for 12-15 minutes until salmon is opaque and flakes easily with a fork.
- Step 5: Garnish with remaining 1 tbsp dill and lemon slices before serving.
