Executive Boardroom Vegetable Stir-Fry

  1. Step 1: Prepare sauce by whisking 3 tbsp soy sauce, 1 tbsp minced ginger, 2 minced garlic cloves, 1 tsp sesame oil, 1 tsp cornstarch, and 2 tbsp water in a small bowl.
  2. Step 2: Heat 1 tbsp oil in a large skillet or wok over high heat until shimmering.
  3. Step 3: Add 1/2 cup julienned carrots and stir-fry for 2 minutes until slightly softened.
  4. Step 4: Add 1 cup sliced bell peppers and 1/2 cup trimmed snap peas, cooking for 3 minutes until crisp-tender.
  5. Step 5: Add 1 cup chopped broccoli and stir-fry for another 2 minutes until vegetables are bright green and tender-crisp.
  6. Step 6: Pour sauce mixture over vegetables and cook for 1 minute, stirring constantly, until sauce thickens and coats vegetables evenly.
