Family Fun Pancake Stack

Ingredients
- 1 1/2 cups all-purpose flour
- 2 tsp baking powder
- 1/4 tsp salt
- 1 1/4 cups buttermilk
- 1 large egg
- 2 tbsp, melted unsalted butter
- 1/4 cup rainbow sprinkles
- 1 cup mixed berries
Instructions
- Step 1: In a medium bowl, whisk together 1 1/2 cups all-purpose flour, 2 tsp baking powder, and 1/4 tsp salt.
- Step 2: In another bowl, beat 1 large egg and 1 1/4 cups buttermilk until combined, then stir in 2 tbsp melted butter.
- Step 3: Pour the wet ingredients into the dry ingredients and mix until just combined (do not overmix); fold in 1/4 cup rainbow sprinkles.
- Step 4: Heat a nonstick skillet over medium heat and lightly grease with butter. Pour 1/4 cup batter per pancake and cook for 2-3 minutes until bubbles form on top, then flip and cook for 1 more minute until golden.
- Step 5: Stack pancakes on a plate and top with 1 cup mixed berries.
