Floodlight Chicken with Lemon-Thyme Pan Sauce

Ingredients
- 4 boneless, skinless chicken breast
- 2 tbsp olive oil
- 1 lemon
- 2 tbsp fresh thyme
- 1/2 cup chicken broth
- 2 tbsp butter
- 2 cloves garlic
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Step 1: Pat 4 boneless, skinless chicken breasts dry with paper towels. Season both sides with 1/2 tsp salt and 1/4 tsp black pepper. Heat 2 tbsp olive oil in a large skillet over medium-high heat until shimmering.
- Step 2: Sear chicken for 5-6 minutes per side until golden brown and internal temperature reaches 165°F (74°C). Transfer chicken to a plate and tent loosely with foil.
- Step 3: Add 2 minced garlic cloves to the same skillet and cook for 30 seconds until fragrant. Pour in 1/2 cup chicken broth and 2 tbsp fresh thyme, scraping up browned bits. Simmer for 3 minutes until slightly reduced.
- Step 4: Squeeze juice from 1 lemon into the sauce, then whisk in 2 tbsp butter until emulsified. Return chicken to skillet, spooning sauce over the top. Cook for 2 minutes to heat through, then serve immediately.
