  2. Step 2: Add carrots, garlic, and thyme, stirring for 2 minutes until fragrant. Pour in 4 cups chicken broth, 1 can diced tomatoes, and rinsed lentils, then bring to a gentle simmer.
  3. Step 3: Reduce heat to low, cover, and simmer for 25-30 minutes until lentils are tender but not mushy, stirring occasionally and adding 1/4 cup water if mixture becomes too thick.
  4. Step 4: Remove bay leaves, season with salt and pepper to taste, and serve hot with crusty bread.
