Garlic-Chive Scalloped Potatoes with Thyme

Ingredients
- 2 lbs Yukon gold potatoes
- 1 cup heavy cream
- 4 cloves garlic
- 3 tbsp fresh chives
- 1 tsp fresh thyme
- 3 tbsp unsalted butter
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Step 1: Preheat oven to 375°F (190°C). Thinly slice potatoes (1/8-inch thick) and soak in cold water for 10 minutes to remove starch, then drain.
- Step 2: Melt butter in a saucepan over medium heat. Add minced garlic and cook for 1 minute until fragrant, then stir in cream, thyme, salt, and pepper. Simmer gently for 5 minutes until slightly thickened.
- Step 3: Layer half the potatoes in a 9x13-inch baking dish. Pour half the cream mixture over potatoes, then top with half the chives.
- Step 4: Repeat layers, then cover dish with foil. Bake 45 minutes, then remove foil and bake 15-20 minutes more until potatoes are tender and top is golden. Rest 10 minutes before serving.
