Garlic-Dill Cod with Cherry Tomatoes and Asparagus

  1. Step 1: Preheat oven to 400°F. Pat 1 lb cod fillets dry. Place on a parchment-lined baking sheet. Drizzle with 1 tbsp olive oil, then sprinkle with 4 minced garlic cloves, 2 tbsp chopped dill, 1/2 tsp salt, and 1/4 tsp pepper.
  2. Step 2: Arrange 1 cup cherry tomatoes and 12 oz trimmed asparagus around the cod. Drizzle with remaining 1 tbsp olive oil.
  3. Step 3: Bake for 15-18 minutes until cod flakes easily with a fork and asparagus is tender-crisp.
  4. Step 4: Remove from oven, top with 1 thinly sliced lemon, and serve immediately with extra dill for garnish.
