Garlic-Dill Cod with Cherry Tomatoes and Asparagus

Ingredients
- 1 lb, 1-inch thick cod fillets
- 2 tbsp olive oil
- 4 cloves, minced garlic
- 2 tbsp, chopped fresh dill
- 1 cup cherry tomatoes
- 12 oz, woody ends trimmed asparagus
- 1, thinly sliced lemon
- 1/2 tsp salt
- 1/4 tsp pepper
Instructions
- Step 1: Preheat oven to 400°F. Pat 1 lb cod fillets dry. Place on a parchment-lined baking sheet. Drizzle with 1 tbsp olive oil, then sprinkle with 4 minced garlic cloves, 2 tbsp chopped dill, 1/2 tsp salt, and 1/4 tsp pepper.
- Step 2: Arrange 1 cup cherry tomatoes and 12 oz trimmed asparagus around the cod. Drizzle with remaining 1 tbsp olive oil.
- Step 3: Bake for 15-18 minutes until cod flakes easily with a fork and asparagus is tender-crisp.
- Step 4: Remove from oven, top with 1 thinly sliced lemon, and serve immediately with extra dill for garnish.
