Garlic-Ginger Beef and Broccoli Stir-Fry

Ingredients
- 12 oz flank steak
- 2 tbsp avocado oil
- 3 cloves, minced garlic
- 1 tbsp, grated ginger
- 1/4 cup low-sodium soy sauce
- 2 tbsp sugar-free syrup
- 1 tbsp rice vinegar
- 1/2 cup, chopped broccoli
- 1/4 cup, sliced green onions
Instructions
- Step 1: Slice 12 oz flank steak into 1/4-inch strips against the grain, then pat dry with paper towels to ensure a good sear.
- Step 2: Heat 1 tbsp avocado oil in a large skillet over medium-high heat until shimmering. Add beef strips in a single layer and sear for 2 minutes per side until browned, then remove and set aside.
- Step 3: Add remaining 1 tbsp avocado oil to the skillet, then add 3 cloves minced garlic and 1 tbsp grated ginger. Sauté for 30 seconds until fragrant, being careful not to burn.
- Step 4: Stir in 1/4 cup low-sodium soy sauce, 2 tbsp sugar-free syrup, and 1 tbsp rice vinegar, then add 1/2 cup chopped broccoli. Cook for 3-4 minutes until broccoli is bright green and crisp-tender, stirring occasionally.
- Step 5: Return seared beef to the skillet and toss to coat in sauce. Cook for 1 more minute until heated through.
- Step 6: Stir in 1/4 cup sliced green onions and serve immediately.
