Garlic-Herb Quinoa Bowl with Roasted Cherry Tomatoes

  1. Step 1: Bring quinoa and water to a boil in a saucepan over medium-high heat. Reduce heat to low, cover, and simmer for 15 minutes until water is absorbed and quinoa is fluffy.
  2. Step 2: While quinoa cooks, toss halved cherry tomatoes with 1 tbsp olive oil, salt, and pepper on a baking sheet. Roast at 400°F (200°C) for 12-15 minutes until tomatoes are blistered and tender.
  3. Step 3: Fluff cooked quinoa with a fork and transfer to a large bowl. Add roasted tomatoes, minced garlic, dill, parsley, lemon zest, and lemon juice.
  4. Step 4: Gently fold in the remaining 1 tbsp olive oil and season with salt and pepper to taste.
  5. Step 5: Divide into bowls, top with crumbled feta cheese, and serve warm or at room temperature.
