  1. Step 1: Preheat oven to 425°F (220°C). Cut 2 medium zucchini into 1/2-inch thick half-moons and place on a parchment-lined baking sheet.
  2. Step 2: Add 1 cup cherry tomatoes to the baking sheet, then peel and mince 4 garlic cloves. Toss everything with 3 tbsp olive oil, 1/2 tsp salt, and 1 tbsp finely chopped fresh rosemary until evenly coated.
  3. Step 3: Roast for 20-22 minutes, stirring once halfway, until zucchini is tender-crisp and tomatoes are slightly blistered and fragrant.
