Garlic-Herb Roasted Tomato & Zucchini Medley

Ingredients
- 2 medium zucchini
- 1 cup cherry tomatoes
- 4 garlic cloves
- 1 tbsp fresh rosemary
- 3 tbsp olive oil
- 1/2 tsp salt
Instructions
- Step 1: Preheat oven to 425°F (220°C). Cut 2 medium zucchini into 1/2-inch thick half-moons and place on a parchment-lined baking sheet.
- Step 2: Add 1 cup cherry tomatoes to the baking sheet, then peel and mince 4 garlic cloves. Toss everything with 3 tbsp olive oil, 1/2 tsp salt, and 1 tbsp finely chopped fresh rosemary until evenly coated.
- Step 3: Roast for 20-22 minutes, stirring once halfway, until zucchini is tender-crisp and tomatoes are slightly blistered and fragrant.
