Garlic Sun-Dried Tomato Chicken with Herbs

  1. Step 1: Pat chicken thighs dry, then season with 1/2 tsp salt and 1/4 tsp black pepper. Toss with 2 tbsp olive oil in a bowl.
  2. Step 2: Spread chicken skin-side up in a baking dish. Scatter 4 minced garlic cloves and 1/4 cup drained sun-dried tomatoes over the chicken.
  3. Step 3: Roast at 400°F for 25 minutes until golden and cooked through (internal temperature 165°F).
  4. Step 4: Remove chicken and let rest for 5 minutes. Strain pan juices into a small bowl, discarding solids.
  5. Step 5: Stir 1 tbsp chopped rosemary, 1 tsp chopped thyme, and juice of 1/2 lemon into the pan juices, then pour over chicken and serve.
