Garlic Sun-Dried Tomato Chicken with Herbs

Ingredients
- 1.5 lbs, skin-on chicken thighs
- 1/4 cup, oil-packed, drained sun-dried tomatoes
- 4 cloves, minced garlic
- 2 tbsp olive oil
- 1 tbsp, chopped fresh rosemary
- 1 tsp, chopped fresh thyme
- 1/2, juiced lemon
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Step 1: Pat chicken thighs dry, then season with 1/2 tsp salt and 1/4 tsp black pepper. Toss with 2 tbsp olive oil in a bowl.
- Step 2: Spread chicken skin-side up in a baking dish. Scatter 4 minced garlic cloves and 1/4 cup drained sun-dried tomatoes over the chicken.
- Step 3: Roast at 400°F for 25 minutes until golden and cooked through (internal temperature 165°F).
- Step 4: Remove chicken and let rest for 5 minutes. Strain pan juices into a small bowl, discarding solids.
- Step 5: Stir 1 tbsp chopped rosemary, 1 tsp chopped thyme, and juice of 1/2 lemon into the pan juices, then pour over chicken and serve.
