Ginger-Glazed Chicken Stir-Fry with Broccoli

Ingredients
- 1 lb, cut into 1-inch pieces boneless chicken thighs
- 2 cups, florets broccoli
- 3 tbsp soy sauce
- 1 ½ tbsp, minced fresh ginger
- 1 tbsp brown sugar
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 2 cloves, minced garlic
- 2 tbsp cooking oil
- 4 cups cooked rice
Instructions
- Step 1: In a small bowl, whisk together 3 tbsp soy sauce, 1 ½ tbsp minced ginger, 1 tbsp brown sugar, 1 tbsp rice vinegar, 1 tsp sesame oil, and 2 minced garlic cloves until sugar dissolves.
- Step 2: Heat 2 tbsp cooking oil in a large skillet or wok over high heat. Add 1 lb chicken pieces and cook for 5 minutes until golden brown and cooked through.
- Step 3: Push chicken to one side of the skillet. Add 2 cups broccoli florets to the other side and stir-fry for 3 minutes until bright green and slightly tender.
- Step 4: Return chicken to the skillet with broccoli. Pour the ginger-sauce mixture over everything and stir to coat evenly.
- Step 5: Cook for 2 minutes more until sauce thickens and glazes the chicken and broccoli.
- Step 6: Serve immediately over 4 cups cooked rice, ensuring each serving has a generous portion of chicken, broccoli, and sauce.
