Ginger-Infused Vegetable Soup with Turmeric

- 2 medium carrots
- 3 celery stalks
- 1 medium onion
- 1.5 inches fresh ginger
- 3 garlic cloves
- 1/2 tsp turmeric powder
- 4 cups chicken bone broth
- 1/4 tsp sea salt
- pinch black pepper
Instructions
- Step 1: Peel and finely chop carrots, celery, onion, and 1.5 inches fresh ginger. Mince 3 garlic cloves.
- Step 2: Heat a large pot over medium heat. Add 1 tbsp olive oil, then sauté carrots, celery, onion, ginger, and garlic for 5 minutes until softened and fragrant.
- Step 3: Stir in 1/2 tsp turmeric powder, 4 cups chicken bone broth, 1/4 tsp sea salt, and a pinch of black pepper. Bring to a gentle simmer and cook uncovered for 20 minutes until vegetables are tender.
